Led by chef and owner Ivan Roianov, The Dill has carved out a reputation for seafood that feels both refined and deeply personal. The menu is anchored in fresh, local produce — think plump oysters, sweet scallops, delicately grilled octopus and impeccably cooked fish — but it’s the layers of flavour that truly set the experience apart. Roianov’s cooking draws on his Ukrainian heritage, weaving soulful sauces, gentle spice and thoughtful technique through every dish, giving familiar seafood a distinctive and memorable edge.
There’s a quiet confidence to The Dill’s offering. Nothing is overworked or over-styled; instead, each plate lets the quality of the ingredients speak, supported by clever pairings and subtle creativity. It’s the kind of menu that rewards both the seafood purist and the curious diner, inviting guests to slow down, share plates and savour each course as it arrives.
Open for dinner from Thursday through Saturday, The Dill returns with a renewed sense of energy that feels perfectly matched to its coastal surrounds. The atmosphere is relaxed yet intimate — ideal for long summer evenings, celebratory dinners, or simply an excuse to indulge in seriously good seafood without leaving the Bellarine.
For locals and visitors alike, The Dill’s seasonal reopening is a welcome marker of warmer days ahead. With its thoughtful menu, warm hospitality and commitment to local produce, it continues to be one of Ocean Grove’s most rewarding dining experiences.
While the restaurant will be closed from 21 – 26 December for the Christmas period, they will reopen on 27 December and remain open 7 days across January.
