Emerge Steakhouse made a sizzling start to their dining journey in Geelong.
Since emerging on the local Geelong hospitality scene in 2019, the steakhouse has served as a safe space for the gluten-free and Coeliac community, made meat-lovers of Ron Swanson-level enthusiasm happy campers, and the local husband and wife team have won over regulars with their quality cuts and customer care.

The Coeliac Australia-certified venue has designed a menu to showcase the best cuts of calf and the best slices of steak as their speciality, employing aging and preparation techniques to showcase the natural genetic goodness of the meat. They also select their meats to include both grass-fed and grain-fed options, again putting emphasis on the exquisite and diverse meat. Their Wagyu is a winner, coming in multiple forms for their carnivorous connoisseurs. Their menu is further curated to include delectable share plate combinations and seasonal main dishes to cater to a wide range of visitors, including vegetarian options.
As Emerge has continues to evolve and establish their footprint in Geelong as a go-to for dining, they have expanded into a new establishment, moving their diner house one street up the hill to 31 Little Ryrie Street.
This move has allowed for their former Ryrie Street central location to be repurposed as a function space. Reconfigured to seat up to 60 guests and 70 standing, the Emerge function space is the ideal space to gather groups for private events including birthday’s, engagements, weddings, anniversaries, corporate functions and for large group bookings for special day’s like Mother’s Day and this weekend’s impending Father’s Day.

The Emerge function space comes with its own dedicated menu of canapes and a three course function menu. Leaning into the Emerge ethos of great steak selections with hero partners, the function menu includes a rounded starters selection of arancini with gruyere cheese, pesto aioli, and manchego, saganaki topped with poached pear, maple walnuts, and a Macedon Shiraz glaze, or local scallops partnered with Chorizo and chipotle butter, and manchego, amongst other stars.
On the mains menu, you will be impressed by the Cape Grim Eye Fillet 200gms placed on a bed of Paris Mash, broccolini and jus, or get struck by the crispy skin duck breast, potato rosti, beetroot horseradish aioli and dutch carrots. The lamb rack rounded out by parmesan herb crust, Paris mash, wilted spinach and jus is another star, or try the house speciality of the Beef Wellington; a puff pastry pocket made up of Cape Grim Eye Fillet, mushrooms, prosciutto, spinach and dijon mustard, placed on Paris mash with jus.
Send off the night with a sweet selection from the desserts menu. Have your choice of sticky date pudding, tiramisu, crème brulee, chocolate brownie, apple and rhubarb crumble or the indulgent red wine poached pear with whipped lemon mascarpone, balsamic reduction and coconut.

For larger crowds, the canape menu offers function favourite of mac and cheese croquettes, along with Emerge showcase items, prawn and pork noodle balls, beef and guiness pies, beetroot and Bellarine Gin cured salmon with dil, cream and wafer, or honey soy beef skewers. You have your choice of 4 items, six items and eight items at a per head rate.
The new function venue allows Emerge to feed more hungry mouths in the region, showcasing the specialities from their sister dining space.
