The brainchild of head pastry chef and owner, Ashlea Allen, That Place Patisserie & Cafe is the product of a career change and an epic adventure. A former exercise scientist, Allen ditched the metaphorical white lab coat in favour of a white toque blanche, following her passion all the way to Paris. She completed her training at L’ecole Grégoire-Ferrandi, one of France’s leading culinary training schools, where she learnt the fine art of Pâtisserie and would go on to work under her idol Philippe Conticini at La Pâtisserie des Rêves, followed by Le Grenier à Pain. Upon her return to Australia, and following a stint as the head pastry chef of Tivoli Road Bakery, Allen launched That Place, bringing a slice of her culinary roots to Geelong whilst adding the Australian authenticity of café culture.
Allen’s attention is on the Viennoiserie. That Place specialises in artisan pastry products, with croissants standing up as the star of the menu. Prepared fresh in-house by Allen, the croissants are perfectly rolled and baked – a soft crunch, a velvety inside, disappearing like a light air. Add a thin slice of cheese and a shaving of ham, and heaven becomes That Place on earth!

With French sweet treats and cakes, a dedicated breakfast and lunch offering which rotates daily to offer the freshest seasonal products, That Place is made for return visits. Along with the pastries, That Place makes all of their own sourdough breads, brioche, yoghurts, muesli, granola, pickles, jams, sauces and more. They also house a shop for take home products, including the condiments, to work into a sustainable food production model.
That Place is based on an ethos of taking the complexity of a French pastry and softening it to place emphasis on the flavours of the significant ingredients in the recipe. Sounds simple but the tastes you will experience at That Place are next level.
